1 garlic clove
1 piece of fresh ginger (about 2 cm)
2 tbsp Soy cream
Extra vergin olive oil
Salt & Pepper
Clean and cut the pumpkin in small pieces, put them in a pan, and cover with water. Cook until soft.
Grate a generous piece of fresh ginger, chop garlic and shallot, and add them to the pumpkin. Season well.
Blend until super smooth adding a drizzle of oil and extra water if needed to have a creamy consistency.
Let it cool down a bit, then serve with a drizzle of extra virgin olive oil, a bit of soy cream and fresh chopped chives.
