This authentic recipe brings the vibrant flavors of Middle Eastern street food straight to your kitchen. These croquettes are a delightful blend of fresh tomatoes, fine bulgur, aromatic spices, and crunchy walnuts, offering a perfect balance of textures and flavors. Ingredients for about 12 croquettes:
2 large ripe tomatoes: For fresh, juicy flavor.
120g fine bulgur: A classic Middle Eastern ingredient that forms the base.
½ large onion: Adds mild sweetness and depth.
2 garlic cloves: Infuses the croquettes with aromatic richness.
½ tbsp tomato paste: Enhances the umami flavor.
½ red bell pepper: For a hint of sweetness and vibrant color.
30g walnuts (ground): Adds a subtle crunch and earthy taste.
½ tsp cumin: A signature spice that provides warmth and fragrance.
2 tbsp corn flour (optional): Helps bind the mixture if needed.
