240g Black beans
200g Parboil rice
150g Green Jackfruit
400 ml water or vegetable broth
½ tsp spicy pigment
1 tbsp thyme
1 tsp black pepper
1 tsp salt
½ ripe mango
Extra vergin olive oil
Salt & Pepper
Rinse the Jackfruit and marinate it for at least half an hour with oil, salt, pepper, paprika powder, chopped garlic and 1/2 lemon juice.
In the meantime, rinse the beans well so that they leave more color and add them to the rice. Add all the spices and flavourings and then also the Jackfruit including the marinade liquid.
Pour the mix into a
baking tray and slowly add water until everything is covered.
Bake in the preheated oven at 190°C for 25-30 minutes, until rice is quite soft and all the water's absorbed.
Clean the mango and cut it into small pieces. Marinate it with salt and pepper and add it to rice 5 minutes before the end of cooking. Serve lukewarm.
You can cover the tray with aluminium foil for the first 15 minutes of cooking...
