Deliciously Vegan: My Journey in Modern Italian Cuisine
In the summer 2021 I participated in a competition for vegan chefs. I qualified by presenting the traditional Polenta with Mushrooms, revisited in a modern and totally vegan way. In the final phase, I also presented and let the jury taste 3 dishes: Ligurian lasagna with potatoes, pesto and green beans, pasta with Mediterranean ragu, and polenta... result? I was one of the winner!

Embracing Vegan Italian Cuisine
This summer, I had the incredible opportunity to dive deep into the world of vegan Italian cuisine at a competition for vegan chefs. As someone who has always held a passion for cooking, this event allowed me to showcase my skills and creativity. The cornerstone of my presentation was a traditional dish that every Italian knows and loves – polenta, but with a modern vegan twist. Transforming a classic into a fully plant-based delight was no easy task, but the outcome was absolutely rewarding!
A Taste of Tuscany: Ligurian Lasagna
After qualifying with my polenta dish, I moved on to the final phase of the competition, where I had the chance to present three exciting dishes. One of them was a Ligurian lasagna made with layers of tender potatoes, homemade vegan pesto, crisp green beans, and tempeh-bacon crumbs. This dish not only captures the essence of Italian cooking but also highlights the endless possibilities available to vegan cuisine. The layers created a beautiful presentation that tasted as good as it looked, which truly impressed the jury!
Perfecting Pasta: Mediterranean Ragu
In addition to the lasagna, I created a pasta dish that featured a rich Mediterranean ragu. This sauce was filled with fresh vegetables, robust herbs, and spices that sparked memories of sun-soaked Italian coasts. The blend of flavors and textures was a reflection of summer, making it a delightful choice that everyone enjoyed. I aimed to show how pasta, a staple in Italian cuisine, could be both indulgent and vegan without sacrificing flavor.
Participating in this competition was not just about cooking; it was a celebration of vegan Italian cuisine and its potential to evolve. Each dish I created was meticulously crafted to ensure it resonated with both traditional flavors and modern dietary preferences. The judges appreciated the innovation behind these familiar dishes, and thankfully, my hard work paid off – I emerged as one of the winners!
A New Era of Italian Dishes
Through this journey, I learned that vegan cuisine doesn’t have to compromise on taste or artistry. Whether it’s polenta, lasagna, or pasta, the world of vegan Italian dishes is vast and exciting.
