300g White flour
60g Coco’s flour
3 Bananas + 1 Banana for the decoration
60 ml Coconut oil
180 ml Sparkling water
15g Baking powder
1 Pinch of salt
1 tsp Cinnamon
Optional: sunflower seeds and walnuts
Reduce the 3 ripe bananas in puree.
Add all the other ingredients, mixing well until you get a uniform batter.
Line a rectangular tray with baking paper and set the batter into it.
With the last banana, decorate the surface and sprinkle with more coconut flour, cinnamon and sugar.
Bake for about 40-45 minutes at 180°C and leave to cool before serving.
